Cured Sausages

Which I love.
When I find a food that I love I always get a hankering to have a go at making it myself.
At hunter-angler-gardener-cook I found some recipes for making your own cured sausages.
I’d love to post the method for Basic Pork Salami; but I’ve not tried it … yet. I think I’ve posted it here so that I can find the link later on.
I love the idea of creating these delicious treats at home.
A couple of years ago I caught a radio program in which small-scale, artisan food manufacturers were interviewed.
One chap had started out by home-producing salamis and the like in his garden shed, effectively. His products became so popular that he was able to give up his regular 9 to 5 job and concentrate solely on cured meat production.
Now, I don’t want to give up my day job, just yet! But, I do like the idea of hosting a dinner party and whipping out my salami. Or presenting someone with my sausage as a birthday gift.
(Y’know the double is my favourite kind of entendre)
